Creative Cooking – Covid Coping – June Mexi Bowl topped with Avocado

Kind of like a taco salad without the lettuce.  I used salsa-seasoned rice, seasoned canned tomatoes, black beans, corn, and crumbled cooked ground beef.  Topped with cheese and microwaved to warm the food and melt the cheese, then finished with avocado slices.  Make it as spicy or mild as you like.  Super simple.
